Wednesday, July 10th

Both teams worked in the kitchen and on the shredding assembly line. Our group cleaned all the tables and chairs in the dining room and then worked on meal prep. We snapped peas, peeled carrots, chopped celery and cut 40 pounds onions. We meet a new chef today, and she let us sample warm homemade bread and cookies. 

In the afternoon we went to the shredding shop. Here they sort and shred old books, papers and and other assorted documents. They are then made into giant baled which they later sell. Initially the paper is dumped on a conveyor belt and people hand sort it, removing anything that is glossy or textured. Sydney told me she felt like we were Lucy and Ethel working at the candy factory. I agreed!! It was a nice change of pace from landscaping, but I’m not sure any of us are eager to go back. 

For dinner we ate at a Mexican restaurant and then everyone had a few hours of free time. Lights out are at 10:30 and we leave for breakfast at 8: 30.  The kids have been great getting settled down at night and have found themselves quite tired at bedtime. On Thursday we are looking forward to the water park and are hoping for a visit from Pastor Hoyte.
